Sweet Potato Breakfast Salad

Ingredients:
1 large sweet potato 2 eggs Tre Stelle Ricotta 1-2 tsp spice blend of choice fresh parsley to garnish salt and pepper to taste
Instructions:
Dice sweet potato. Toss in extra virgin olive oil and coat in spice blend of choice as well as salt and pepper. Roast sweet potatoes at 350F degrees for 15-20 minutes or until fully cooked. Boil 2 eggs until desired state. Plate roasted sweet potatoes. Crumble Tre Stelle Ricotta all over. Top with egg and garnish with fresh chopped parsley. Enjoy!
